paleo bread revisited

Not too long ago, I posted a recipe for "paleo" bread. Since then, I've tried this honey-free version a few times, and like it even better. Judging by the speed with which it disappeared from my home, my husband also approved of this modified recipe {although it is still not as pretty as Elana's version, which is the inspiration for this recipe}.

Ingredients:
1.5 cups almond flour
1/4 cup golden flaxseed meal
2 tablespoons coconut flour
1 tablespoon coconut sugar
1.5 teaspoons baking powder*
5 free-range large eggs
1 tablespoon apple cider vinegar
1/4 cup coconut oil, melted

parchment paper to line a loaf pan

Preheat oven to 350. Combine all dry ingredients and pulse in food processor until thoroughly combined. Add in the eggs, vinegar, and oil, and pulse until completely mixed. Pour the dough into the lined loaf pan. Bake for 60-65 minutes.

* Baking powder is not the same as baking soda. I try to use baking powder instead of soda because it is aluminum free.
